Made from potato starch. Potato flour can be used in bakes which call for a denser texture, such as pancakes or flatbreads. But it can also be used in homemade sauces and gluten free batters too! No. The recipe used to make this bread is unique to Gluten Free Alchemist. Recipes on flour bags (in my humble opinion) rarely produce bread that tastes anything like real bread. And while this bread is nowhere near as amazing as my Wholemeal Bread (I even have a bread-machine version, a Vegan bread-machine version and a Vegan hand-baked version), it’s actually still better than many other Doves Gluten Free Brown Bread Flour recipes.

However, there are a couple of things to be aware of. While oats themselves don’t contain any gluten, there is a risk that they may become contaminated with other cereals that do contain gluten. 15 This recipe calls for whole grain teff, not teff flour. I have wondered whether it would work with teff flour, though. And whether whole grain teff could be replaced with, say, chia seeds. I bet it could! But actually, for the basic recipes below, most of the base flours are in proportion with my tried and tested home-blended rice-free flour blend B. If (like me) you keep a tub of the blend pre-mixed, adding the additional flours will be no trouble at all. Unlike our later gluten free bread development, this particular loaf does not rely on either psyllium husk or flax for texture or structure. Instead, it uses a little gelatine (or vege-gel for vegetarian bakes). Not so much that it is detectable, but just enough to help it hold together. There is quite a lot of yeast in this recipe and when I developed it, it was definitely needed. But as you have a different yeast, I would try experimenting to see how much you need. GF bread doesn’t always behave as ‘usual’ recipes might and a wholegrain GF recipe can need a bit more ‘boost’. Perhaps start at 10g with your local yeast and then work up/down dependent on the rise and result. Allinsons is fairly bog-stadard here though.
